Technology News Helen’s World of Creativity By Helen Gill - HelloU Creative ARTS & CULTURE TECHNOLOGY EDUCATION COMMUNITY A Moment in Time: Finding the Balance There’s something about this time of year that invites reflection. The clocks spring forward – we lose an hour, yet gain light. Longer days, brighter evenings, and that gentle sense that everything is starting again. It feels lighter. A reset. Redefining Time Shifting from a 9-5 role to setting up my own business took me time to adjust. I had to give myself permission to work differently to embrace a more flexible structure to my day. Some days that means working early. Some days working late. And sometimes… not working at all. Choosing instead to spend time with my family. And that took time to feel normal. Children grow up so quickly. One moment you’re guiding them, the next you’re watching them become their own person. It’s a strange feeling – wanting to hold onto time while also knowing you can’t. It makes you pause and wonder… what does time actually mean? Always Connected We live in such a digital world now. We’re always connected – scrolling, replying, sharing. And while that can be entertaining and engaging, it can also quietly take us away from the moment we’re actually in. Through my work in art, augmented reality, and community projects, I see how powerful technology can be when it’s used with intention. It can bring people together, tell stories, and create meaningful, shared experiences. But it’s about balance. Because creativity doesn’t come from constantly being “on.” It comes from space. From real moments. From simply being present. A Story About Time I recently took some time out to read Dear Father Time by Rosemary Phillips, and it really resonated with me. It’s a beautifully illustrated story about our relationship with time – how easily we lose it, and how we can begin to find it again. What makes it even more powerful is the thinking behind it. Rosemary brings decades of experience exploring mindfulness, learning, and human development into something that feels simple and accessible for both children and adults. Through the story, you’re gently reminded that time isn’t something we need to chase, fill, or control it’s something we experience. In a world shaped by algorithms, notifications, and constant content, that message feels more important than ever. The book also highlights something we don’t always stop to think about – how digital platforms are designed to capture our attention, often pulling us away from the present moment without us even realising. But real life isn’t there. Being present matters. Understanding the value of our time matters. I often think about something my dad used to say when I worried over things that didn’t really matter: tomorrow is another day. And as you get older, you begin to realise how true that is. Time moves quickly, and many of the things we once worried about simply fade away. Each piece goes beyond the surface, capturing not just the artist, but the essence of their creative journey - what inspires them, how they think, and how their work takes shape. These are portraits that invite you to truly see the person behind the art. What makes this project particularly compelling is its thoughtful integration of augmented reality. Rather than replacing the artist’s hand, technology is used as a subtle extension enhancing, not overpowering, the authenticity of each piece. It challenges the idea that technology threatens creativity, instead showing how digital tools can elevate storytelling and deepen connection. The result is a compelling blend of tradition and innovation - where artists are both still… and seen. What I love about both of these projects is how they each explore time in their own way. One looks at time through memory, heritage, and generations, what we carry with us. The other captures a moment in the present - shaped by technology and how we choose to express ourselves today. Together, they remind us that creativity is one of the ways we make sense of time. Whether we’re reflecting on the past, experiencing the present, or experimenting with new tools to shape the future, creativity helps us pause, connect, and understand both ourselves and each other a little more deeply. And maybe that’s the balance we’re all searching for. Not more time but more meaning in the time we have. Layers of Womanhood at Cafe Bar Brew, Hull A new exhibition at Cafe Bar Brew brings together the powerful work of local artists Inga Beadle and Teddy Lucine. Cafe Brew, Hull on 2nd-14th May 2026. This thoughtful showcase explores the layered realities of womanhood - drawing on cultural roots spanning Lithuania, Burma, and Britain. Through expressive mark-making and intimate imagery, the artists reflect on lived experiences as mothers, daughters, sisters, and individuals navigating complex and often challenging paths. What stands out is how deeply personal yet universally resonant the work feels. Memory, identity, and resilience are woven into each piece, inviting viewers to pause and consider how heritage and environment shape the female experience across generations. Set within the welcoming atmosphere of the café, the exhibition creates space not just for viewing, but for conversation and connection - amplifying voices that are sometimes unheard, yet deeply felt. Emily Coxon - Interior Designer: SPEND Curtains Buying off the shelf just doesn’t compete with beautiful bespoke House & Home Nikki Robinson - Interior Designer: SPEND Sofas & Armchairs If there is one area worth investing in, it is your seating. A well-made sofa or armchair will not only last for years, but will also define the comfort of a room in a way very little else can. Look for pieces that are thoughtfully constructed, ideally using natural materials, with a shape that feels timeless rather than trend-led. Makers such as Lorfords, George Smith and Kingcome are known for exactly this. It is these pieces that anchor a room, both physically and aesthetically, so it is worth getting them right. Whether it is a beautifully proportioned bookcase, a considered boot room or a simple run of cabinetry, it has the ability to make a room feel resolved. Well-designed joinery brings both function and permanence. It is often the element that allows a home to feel tailored to the way it is lived in, rather than simply decorated. I can highly recommend Green Cherry Services and Crawford Joinery as local tradesmen that are both a pleasure to work with. (See their adverts in this edition) Mattresses It may not be the most visible investment, but it is certainly one of the most important. A well-made mattress will last for years, and have a direct impact on how you feel day to day. Natural materials are always worth considering here, both for comfort and longevity. Brands such as Naturalmat offer beautifully made options that feel as good as they look. SAVE Sofa & Curtain Fabrics While it is worth investing in the structure of a sofa or the making of curtains, the fabric itself is often where you can be more savvy. Continued on Page 8 Spend Versus Save: We look at where Interior Designers Invest & Where They Hold Back The success of an interiors project often lies in knowing where to splurge and where to scale back. From bespoke joinery and beautifully made sofas to vintage finds and high-street accessories, we asked our favourite local designers for their ultimate spend-versus-save tips... Both require a surprising amount of material, so choosing a simple, well-priced linen can be a more practical approach. Suppliers such as Tinsmiths or The Cloth Shop offer beautiful plains that work effortlessly within a scheme. Interest can then be introduced more lightly, through cushions, throws or a carefully chosen trim. A well placed detail like a Braid can elevate even the simplest fabric - I love looking at the selections at The Cloth Shop and alway find that little something special on their site. They have a great selection of Antique & Vintage Fabrics as well as other pieces that will motivate you to get out your credit card!! I was recently browsing for some vintage hand dyed linen and ended up with some fantastic American storage jars and a Vintage Linen Grain Sack!! (www.theclothshop.net) Rugs Rugs are one of the hardest working elements in a home. A natural jute rug offers a wonderfully relaxed foundation and can be replaced over time as it wears. Something like this from La Redoute is a good example of something that feels considered without being overly precious. Antique Furniture Antiques are often assumed to be an investment, but they can be one of the most cost-effective ways to bring character into a home. Auction houses, local fairs and places such as The Saleroom can be a rich source of beautifully made pieces at a fraction of the cost of new. House & Home specifying cheaper options as they’re prone to failure and far more costly to fix once installed. Hardware Do spend on good hardware and cupboard knobs. They are a relatively small upgrade but can completely transform cabinetry and elevate a room. SAVE Art Do save on artwork. You can find beautiful prints or pieces with real meaning without spending a fortune - I picked up the Metropolis poster (pictured right) from Poster Heaven. (www.posterheaven.co.uk) Rugs Rugs can be a place to save if needed. Vintage kilims are often surprisingly affordable and bring great character, while for larger areas a simple textured jute works beautifully. Furniture You can save on furniture by visiting antique fairs, and often finding well-made, characterful pieces at more accessible prices. Jackie Gibbs - Interiors Consultant: SPEND Curtain-making handmade curtains – they are something worth stretching your budget for. Joinery Bespoke joinery is another item I would always budget for. Made to measure, storing exactly what you require, it’s such a worthwhile investment. SAVE Table Lamps There are so many brilliant more budget options out there: OKA, Pooky, Rowen & Wren to mention a few – you really can create impact without breaking the bank. Paint Colour Matching Neutral paints are a great way to save money if you’re on a budget – just make sure you get a tester done beforehand to check the colour is a good match. Cushions Handmade cushions are lovely, but the high street has so many fantastic options. Zara Home is my go-to for cheaper cushion options, but I also love the choice at West Elm (www.westelm.co.uk) Kellie Arnold - Interior Designer: SPEND Upholstery Do spend on upholstered pieces such as sofas and armchairs. These are pieces you live with every day, so quality really matters. A well- made frame will last for years. It’s always better to choose a well- made piece and upholster it in a more cost-effective fabric than the other way round. Taps Do invest in good-quality taps and shower valves. It’s a false economy Curtains are an investment, but if they are properly made, they will last so much longer and look so much better. It is more important to have well-made curtains in a cheaper fabric than choosing an expensive fabric and then scrimping on the making up. In the sitting room below, we used a simple charcoal and off-white ticking-stripe fabric for the curtains from Ian Mankin which was very affordable but complemented the wallpaper used, adding a simple elegance in keeping with the period panelling in the room. However, we did use a more expensive brass curtain pole, and the curtains are generous and well made. House & Home Continued on Page 12 Upholstery In the same living room ,we have a beautiful Lorfords sofa, upholstered in a less expensive Colefax & Fowler fabric, with a bullion fringe from Samuel & Sons. By using more affordable fabrics where you need large quantities (like for window treatments and upholstery) you can then splurge on more expensive fabrics where you need smaller quantities, like on footstools, cushions and club fenders. Hardware & Taps Buy the best hardware and taps for bathrooms and kitchens your budget will stretch to. Door knobs and taps are items that you use and handle every day and are exposed to a lot of wear, and if these are cheap, it shows and you can feel it every time you use them. SAVE Vintage & Antique Furniture I source a lot for my clients and myself by scouring auction houses, antique fairs and antique shops. Antiques are usually so much better made than buying something new for the same price, and give a lot more character and depth to a room. Recently, I used an antique side table and lamp next to the sofa, and an antique chest of drawers and chair sourced at auction. What you could buy new for the same price would never have been as lovely. Paint Colour Matching When it comes to colour matching, I avoid this when I can as I prefer to use branded paints to remain true to colour. I certainly advise my clients never to colour-match neutral or pale colours as they are never the same. But if you are on a budget and really do want to colour match, then stronger and more saturated colours tend to match better. A clean-lined side table, for example, can complement a more luxurious sofa beautifully, allowing the room to feel effortless rather than overworked. Mirrors Mirrors can be approached with a more measured budget, particularly when not intended as a statement feature. A mirror above a dressing table should feel well-sized and functional, but it doesn’t need to be overly decorative or costly to be effective. Its role is to reflect light and support everyday use. Tom Vickers - Fashion/Interior Designer: SPEND Custom Joinery/Wardrobes Joinery is an expensive line item on the budget spreadsheet, but it’s something that translates directly into both daily functionality and long-term value. Off-the-shelf solutions rarely maximise space or align cleanly with the architecture of a room, whereas well-designed joinery can unlock awkward corners and improve storage efficiency. Investing in quality materials, thoughtful internal configurations and skilled craftsmanship is worth it in the long run, especially in smaller homes where space is a premium. Sofas Be kind to your bottom and invest in a lovely sofa. It is often the most heavily used piece of furniture in the home and takes centre stage in any room, so it’s worth prioritising quality over short-term savings. Higher-end sofas typically offer superior frame construction, suspension and cushioning, which not only improve comfort but also significantly extend lifespan. From a design perspective, the sofa also anchors the room – its proportions, upholstery and silhouette set the tone for the entire space. SAVE Chests of Drawers A chest of drawers is one of the easiest places to save without compromising on quality or character. They are often full of unique pieces – hand-thrown vases, glazed bowls and decorative objects – that bring far more character than mass- produced alternatives. These items are ideal for styling shelves, coffee tables and kitchen spaces, adding texture and individuality at very low cost. Mixing older ceramics with newer pieces also creates a more layered, collected look, which feels both considered and personal rather than overly curated or uniform. Cain Omerta - Interior Designer: SPEND Authentic Materials Invest in real stone, real wood and beautifully ageing metals like unlacquered brass. These materials bring depth, warmth and longevity – the foundations of a truly elevated space. Tapware Tapware is used daily, so quality matters. I lean towards nickel or unlacquered brass for their timelessness, and always recommend choosing a brand with at least a 15-year guarantee. Made-To-Measure Curtains Well-tailored curtains instantly elevate a room. They add softness, height and a sense of intention that off-the-shelf options rarely achieve. SAVE Decorative Lighting Table lamps and occasional lighting are a great place to be flexible. There are so many beautiful high-street and vintage options that deliver on style without the designer price tag. Styling Accessories Vases, trays and decorative objects can be sourced more affordably and layered over time. Mixing high and low creates a more relaxed, collected feel. Jute Rugs Natural jute rugs are brilliant for adding texture and warmth without overspending. They work beautifully in relaxed, high-traffic areas and can be layered with smaller, more decorative rugs if needed. Chloé Morris - Interior Designer: SPEND Bespoke Joinery I always set aside a large chunk of the project budget for bespoke joinery. I’m trying to branch out from my typical crime thrillers, so I was thrilled to see that Taylor Jenkins Reid’s Atmosphere is coming out in paperback. Like so many, I adored The Seven Husbands of Evelyn Hugo. Her novels are the perfect mix of sheer escapism and sharp, intelligent writing. Set against the backdrop of the 1980s space shuttle programme, her latest is as an epic love story about pushing boundaries. It’s the kind of transportive, character-driven story I love. Your fruit and veggies are giving you more than vitamins -- they are raising pesticide levels in your body, warns a study that appears in the ‘International Journal of Hygiene and Environmental Health’. Research from the Environmental Working Group (EWG) reveals that what’s on your plate may directly shape the pesticides circulating in your body. Researchers found that people who eat more fruits and vegetables known to carry higher pesticide residues, like strawberries, spinach, and bell peppers, also have significantly higher levels of those chemicals in their urine. While produce remains a corner- stone of a healthy diet, the findings highlight how everyday food choices can drive real-world exposure to substances linked to cancer, hormone disruption, and developmental harm. Switching from conventional produce to organic options can significantly lower pesticide biomarkers in the body within just a few days Gym Supplements Linked To Sleep Loss New research from the University of Toronto, published in the journal ‘Sleep Epidemiology’, suggests that popular gym supplements marketed to boost energy and exercise performance may be undermining sleep in adolescents. Researchers have found that those adolescents, who use preworkout supplements, are more than twice as likely to report sleeping five hours or less per night than those who don’t use them. These products commonly contain large doses of caffeine, anywhere between 90mg to over 350mg, more than a can of Coke. This may impact sleep, which is critical for healthy development, mental wellbeing, and academic functioning. Researchers say that gym supplements are not harmless fitness products and - Lao Tzu health professionals, including family doctors, should routinely ask young patients about their pre-workout supplement use. They also recommend avoiding these products 12 to 14 hours before bedtime. Sit Less For A Healthy Bladder A study, published in the journal ‘BJU International’, looked at 69,795 healthy middle-aged men over the course of two and a half years and recorded the amount of time they spent sitting, their physical activity, and whether they had lower urinary tract symptoms (LUTS)T. he researchers found that those who spent five or more hours per day sitting, as well as those who had low physical activity levels in general, were more likely to develop LUTS, which included incomplete emptying, urinary frequency or urgency, a weak urinary stream, or having to get up to urinate at night. The fix would be to sit less. And, if you have to sit all day for work, stand up and move around for five minutes every hour. The Way You Talk Could Reveal Dementia Risk A new study from Baycrest, the University of Toronto, and York University suggests that how we talk in casual conversations may offer a window into how well our brains are functioning. Their findings, that appear in the ‘Journal of Speech, Language, and Hearing Research’, suggest that small details in speech timing, including pauses, fillers such as ‘uh,’ ‘um,’ and moments of word-finding difficulty, are closely tied to executive function. Executive function refers to the mental abilities that help us plan, remember information, stay organised, and shift between tasks. The study builds on earlier work showing that faster speaking rates are associated with stronger cognitive performance in older adults. Researchers believe that given the ease, convenience, and sensitivity of natural speech analysis, it is an ideal choice for repeated assessments to identify people experiencing cognitive decline at a high rate and may be at risk for developing dementia. Health & Wellbeing News... ChatGPT As A Therapist? As millions turn to ChatGPT and other AI chatbots for therapy-style advice, new research from Brown University raises a serious red flag. Research, that appears in the journal ‘Proceedings of the AAAI/ ACM Conference on AI, Ethics, and Society’, has found that even when instructed to use established psychotherapy approaches, the systems consistently fail to meet professional ethics standards set by organisations like the American Psychological Association. In testing, chatbots mishandled crisis situations, gave responses that reinforced harmful beliefs about users or others, and used language that created the appearance of empathy without genuine understanding. Researchers say that, for human therapists, there are governing boards and mechanisms for providers to be held professionally liable for mistreatment and malpractice. But, when LLM counsellors make these violations, there are no established regulatory frameworks. How Pecans Boost Heart Health A new scientific review, published in the journal ‘Nutrients’, suggests that pecans may pack more heart power than many people realise. Researchers at the Illinois Institute of Technology conducted the review, examining a broad range of studies that have highlighted how pecans fit into modern dietary habits and current health priorities. The strongest and most consistent evidence was on heart health, particularly blood lipids. Researchers found that, across multiple studies, people who regularly ate pecans in snacksized portions had improved total cholesterol, LDL (bad) cholesterol, triglycerides and non-HDL cholesterol. Pecans are rich in polyphenols, which is a type of antioxidant, and other bioactive compounds. These components may help enhance the antioxidant activity in the body and reduce lipid oxidation, a process associated with oxidative stress. Emerging research also suggests that pecans may support healthier post-meal lipid metabolism, an important factor in heart health. How GLP-1 Medications Protect Heart According to research, in nearly half of all heart attack patients, tiny blood vessels within the heart muscle remain narrowed, even after the main artery is cleared during emergency medical treatment. This results in a complication known as ‘no-reflow’, where blood is unable to reach certain parts of the heart tissue. Previous research has shown that this narrowing of blood vessels increases the risk of death or hospital admission for heart failure within a year of a heart attack. But, suggests a study,published in the journal ‘Nature Communications’, GLP-1 drugs may prevent this problem. The medications activate potassium channels, which relax mural cells called pericytes that help regulate blood flow, and allow previously constricted blood vessels to widen. As a result, blood can reach heart tissue more effectively, lowering the chance of additional damage. Food & Drink Everyday spices can pack a powerful health punch, from easing arthritis pain and boosting mood to reducing inflammation. Here are six of the best… 1 Ginger Best for: Treating arthritis Why: Mostly known as a treatment for nausea, ginger does far more. ‘Ginger has been used for centuries in Chinese and Ayurvedic medicine and it’s also one of the most studied spices in Western medicine, with hundreds of medical trials on everything from migraines to arthritis,’ explains Dr Alan Gifford, head of functional medicine at a private GP Practice. ‘Most of the arthritis studies have looked at osteoarthritis, specifically knee pain. In a trial by the University of Miami, 247 patients took ginger supplements for six weeks, and 42% had less knee pain after walking, and took less pain medication. It works in the same way as non-steroidal anti-inflammatory drugs such as ibuprofen, by blocking inflammatory pathways and numbing pain receptors.’ A Hungarian study in 2024 linked the pain-reducing capabilities of ginger to the anti-inflammatory compounds it contains, particularly shogaol, an antioxidant only found in dried or heat-treated (not fresh) ginger. How to take: Supplements of concentrated ground ginger or extracts of ginger have been used in most scientific studies so that very high doses could be administered (more than 500mg daily in the Miami trial). However, the amount needed to address inflammation in the wider population is much lower, with an Iranian study finding that just 2g a day of ground ginger (approximately 1 teaspoon) significantly reduced inflammatory markers in people with Type 2 diabetes. Serving suggestion: Add ground ginger to carrot or parsnip soup. 2 Chilli Best for: Boosting gut bacteria Why: ‘Chilli peppers contain capsaicin, an active compound that encourages the production of beneficial bacteria and reduces harmful bacteria in the gut – this is useful as we age because our microbial diversity naturally declines,’ explains Dr Gifford. Capsaicin increases a type of bacteria called Akkermansia, which strengthens the gut barrier. Higher levels of Akkermansia have been linked to lower body fat and healthier blood sugar levels. People with sensitive stomachs should be cautious as chilli can act as a metabolic stimulant, which speeds up gut transit. How to take: You only need a small amount a few times a week, it doesn’t need to be daily. If you don’t tolerate heat, mild chillies give the same health boost. Serving suggestion: Add a Mexican touch to scrambled eggs with a sprinkling of chilli flakes. 3 Turmeric Best for: Reducing inflammation Why: ‘Turmeric contains curcumin, a polyphenol that helps to dampen inflammatory pathways in the body, reduce cytokines (inflammatory signalling molecules), and reduce oxidative stress,’ explains Dr Gifford. ‘As we age, we experience low-grade chronic inflammation, leaving us at higher risk of osteoarthritis, cardiovascular disease and cognitive decline. Turmeric can help to gently calm that process.’ A Chinese meta-analysis found that using curcumin in treating chronic diseases including arthritis, psoriasis, and irritable bowel disease can cut the inflammatory response and improve symptoms, relieve pain and speed recovery. How to take: Because turmeric contains such tiny amounts of curcumin (2-6%), supplements are used in medical trials. Taken as a medicine, a common curcumin dose is 400 to 600mg three times a day, the equivalent of 15g of turmeric powder (up to 6 teaspoons). To cut inflammation, try a dose of 800mg daily. Up curcumin’s Spice up your life bioavailability by eating it with black pepper and healthy fats. Eating it in the diet is safe, but check with a doctor before taking a supplement. Turmeric can block iron absorption so I wouldn’t recommend if you’re anaemic. Do not take curcumin supplements if you are on blood thinners and check with a GP/pharmacist if you are on blood pressure medication. Serving suggestion: Mix it with cinnamon, black pepper and hot milk to create golden milk, a traditional Indian drink. 4 Saffron Best for: Treating depression Why: Extracted from crocus flowers, this vividly coloured spice has been the subject of several recent medical studies. A large 2024 review by Indian scientists said it was a promising treatment for mild to moderate depression. It’s thought to work in a similar way to antidepressant drugs, keeping the feel-good neurotransmitter serotonin at high levels. e research backed up findings that saffron has antidepressant qualities akin to prescription SSRIs, including fluoxetine and citalopram. It also has strong antioxidant properties, which can help with inflammation and oxidative stress, both factors implicated in depression. How to take: Most medical studies have used doses of 30mg saffron extract. It would be hard to get this from diet alone, so supplements would be needed, such as Viridian Saffron Extract. Talk to a GP or pharmacist first. Serving suggestion: Saffron is a powerful antioxidant. Steep the threads in the stock of a risotto – this will release the spice’s full flavour and colour. 5 Cinnamon (Pictured Top Right) Best for: Regulating blood sugar Why: Cinnamon is a crowd-pleas- ing dried bark and is a powerful agent in lowering blood glucose levels, particularly important for those with Type 2 diabetes. A 2024 study gave obese and pre-diabetic subjects 4g cinnamon a day for four weeks and found that overall glucose concentrations were consistently lower in the cinnamon group than the placebo. There was also a fall in triglycerides (fat in the blood). The effects were put down to cinnamon’s high polyphenols upping insulin sensitivity. How to take: While subjects were given supplements, the 4g could be gained through diet. Be careful, though, warns Wood: ‘Most commercially available cinnamon isn’t actually cinnamon at all, it’s cassia. Cassia looks, smells and tastes like cinnamon, but it does not have the health benefits and can harm the liver in high amounts. Look for Ceylon cinnamon or “true cinnamon”.’ Serving suggestion: Stir 1 teaspoon into overnight oats or porridge. 6 Cardamom Best for: Lowering blood pressure Why: Some trials have connected cardamom intake with reductions in systolic and diastolic blood pressure. ‘It appears to relax blood vessels, possibly because of the potassium and antioxidants it contains,’ says Dr Gifford. ‘It could also be due to its diuretic properties (increased urination removes water build up and decreases blood pressure). Blood pressure and arterial stiffness naturally increase with age, so this could help as an adjunct (not a replacement) to medication.’ How to take: 1⁄2-1 teaspoon of ground cardamom a day as part of a healthy diet,’ says Dr Gifford. Food & Drink Erkan Sahindal - business owner at the Olive Tree on Lincoln Way, Beverley - and accomplished chef shares his recipe for Gochujang Salmon - Traybakes are a weeknight staple in our household because they’re versatile and vibrant – you just chuck it all onto a baking tray and let the oven do the work. Maximum flavour and minimal clean- up while keeping it healthy and balanced is what I’m all about. It’s nutrient-dense but doesn’t compromise on flavour with the sticky-sweet gochujang glaze and the sweetness of the roasted vegetables. Whether you’re a fish fan or not, I’d urge you to give this a go.. SERVES 2 TOTAL TIME 40 mins EASY INGREDIENTS 300g of baby potatoes, chopped into halves or thirds 1 red onion, cut into wedges 1 red pepper, cut into large chunks 1 orange pepper, cut into large chunks 1 tbsp of olive oil 1 carrot, peeled and cut into 5mm–1cm slices 2 x 130g salmon fillets 100g of tenderstem broccoli 50g of green beans 1 tsp of sesame seeds, to garnish ½ lime, cut into wedges, to serve Salt & black pepper FOR THE MARINADE 1 tbsp of gochujang paste 1 tbsp of soy sauce 1 tbsp of runny honey 1 garlic clove, crushed ½ tsp of finely chopped fresh root ginger Juice of ½ a lime METHOD Step 1 Preheat the oven to 200°C Fan (425°F/Gas Mark 7). Line a large baking tray with baking parchment or kitchen foil. Step 2 Toss the potatoes, onion, pepper and carrot with the olive oil and some salt and pepper. Spread over the prepared tray and roast in the oven for 20 minutes until it’s just starting to soften. Step 3 Meanwhile, make the marinade by combining all the ingredients in a bowl. After 20 minutes, remove the tray from the oven. Nestle Gochujang Salmon the salmon fillets among the vegetables and brush with the marinade. Arrange the broccoli and greens beans around the salmon and drizzle the remaining marinade all over. Return the tray to the oven and bake for another 15 minutes, or until the salmon is cooked through. Sprinkle with sesame seeds to garnish and serve up with lime wedges on the side. Olive and chilli pasta You can use any variety of olive you have knocking about in your fridge for this. We used Nocellara olives for their lovely bright green colour and buttery flavour. SERVES 2 • PREP 10 mins COOK 10 mins • EASY V INGREDIENTS 150 g pappardelle* 100 g olives, pitted 2 garlic cloves, crushed 1 Tbsp. capers, rinsed ½ tsp chilli flakes, depending on taste ½ Tbsp. extra virgin olive oil Small handful parsley leaves roughly chopped METHOD Step 1 Bring a large pan of salted water to the boil and cook the pasta according to pack instructions. Drain, reserving a mugful of the pasta water. Step 2 Meanwhile, in a high-speed blender or the small bowl of a food processor, whizz the olives, garlic, capers and lemon zest and juice until fairly smooth. Step 3 Return the pasta to the pan, add the olive tapenade, chilli, oil, parsley and a splash of pasta water to make it glossy. Mix to coat and serve. *We’ve used pappardelle here but of course any pasta shape will work - something like linguine or spaghetti will allow the glossy sauce to cling onto the pasta. Travel We discover Britain’s tiniest treasures, each small in size but rich in History.... 1. House Painted a cheery bright red and perched on the bustling quayside of Conwy, Wales, the Quay House never fails to raise a smile from passersby. This 16th-century curiosity measures just 72 inches across, 122 inches high and 120 inches deep. The house is open to visitors, who are welcomed, as tradition dictates, by a guide dressed in Welsh costume. 2. Street Ebenezer Place in Wick in the north of Scotland not only carries the title of being the smallest street in the UK, it’s also the smallest (shortest) in the world. It appears in the “Guinness Book of World Records” and measures just six feet nine inches (2.06 m) from start to finish. We don’t imagine there would be any parking here – as the length of the average car in the UK is almost twice the length of the street (at over four metres)! 3. Church Set on the seafront at Rhos-on- Sea in Wales, St Trillo’s Chapel is widely regarded as the UK’s smallest church, measuring just 11 feet by eight feet and seating only six people. Dating back to the 16th century, though rooted in a sixth-century hermitage built over a natural holy spring, it served as a place of baptism and healing for centuries. Still used for quiet prayer today, this tiny stone chapel offers visitors a peaceful glimpse into early Welsh Christianity. 4. Town Nestled beside the River Stour in Essex, Manningtree holds the proud distinction of being England’s smallest town by land area, covering just 47 acres (19 hectares). Steeped in history, it grew as a medieval market town and later became known for its links to Witchfinder General Matthew Hopkins. Today, it is known for its Georgian-fronted high street, independent shops and riverside views – it even has a tiny patch of sandy beach, ideal for soaking up the sun in the summer. 5. Pub Tucked away in historic Bury St Edmunds, The Nutshell is reckoned to be Britain’s smallest pub, measuring just 15 feet by seven feet. So is this a stretch too far for the GT3, or a sign that with Electric Vehicles stumbling, Porsche needs a surefire money-spinner? The Porsche 911 GT3 is now available as a convertible for the first time... Increased materialism, or the importance of one’s possessions, is linked to heightened aggression, too. The kind of car you drive could predict how you act - and how others perceive you. Drivers in sports cars and big trucks are often seen as more aggressive. Some drivers say they feel more powerful and dominant behind the wheel of these vehicles. Those who admit to aggressive driving also admit to engaging in more incidents of breaking the law. Researchers suggest that, to tame road rage, remind yourself to take a deep breath, stay calm, and do whatever it takes to bring your anger down. According to research published in the journal ‘Psychiatry’, about one- third of drivers report committing road rage at one time or another. While most of these incidents involve shouting and gesturing at other drivers, a small minority of encounters escalate to direct and damaging contact. Offenders are most often men. Contributory factors to road rage may include various environmental factors, psychological factors, and psychiatric disorders. Suggests another study that appears in the journal ‘Risk Analysis’, people with impulsive, angry personality traits run a higher risk of engaging in aggressive driving behaviour than people without those characteristics. Hyper-masculine drivers, often referred to as macho, are more aggressive on the road. People who really identify with their cars drive more aggressively, suggests a study from Temple University. In their report, published online in the ‘Journal of Psychology & Marketing’, researchers have found that people who view their cars as an extension of themselves have stronger What is Driving Your Road Rage? In a time when quick fixes often take priority over doing things properly, Martin Sadler is quietly proving that real craftsmanship still matters. We left the UK just before Easter and the hedgerows and verges were full of cowslips heralding spring, soon to be replaced by moon daisies. We have just spent a week driving through Croatia from Zagreb to Dubrovnik on our way to Greece. I was struck by the abundance of the white flowered Gaura growing in the roadside verges. I assume that it was once a garden escape as it is not native to this part of the world. It has certainly found a new niche with its delicate stems dancing in the wind, parading its beautiful white inflorescences. I have limited success over-wintering this plant at home, but I am happy to buy a new stock each May to enhance my containers with its lightness of texture and movement. You feel that you have many butterflies with you all the time. The common names Indian Feathers and Whirling butterflies describe it well. Now in Greece we find the verges adorned with sun-loving daisies which resemble poached eggs with frilly edges, but their presence is short- lived as when we return to Greece in the summer they will be gone. IN THE GARDEN Hanging basket time is upon us once again. Wire baskets lined with natural material look so much better than the plastic ones. The birds in our garden do a good job in providing plenty of moss which they scatter everywhere when collecting for their nests. I gather it up, soak it and use it with fern leaves for lining. I shall add some layers of wet cardboard to increase the moisture retention. I have seen Phormium and Cordyline leaves plaited to make a natural-looking lining, but that would need added moisture-retentive material along with swell-gel in the compost. Single-flowered baskets give a great splash of colour and are easy to manage as all the plants have the same requirements. Petunias, hanging begonias and Calibrachoa (Million Bells) are suitable. Mixed plants give a more varied and decorative display. Trailing plants can help to hide the basket. Trailing lobelia, Bacopa and Million Bells interspersed with busy lizzies, geraniums and fuchsias make a good combination, the latter three needing frequent dead-heading. Yet more interest can be added with foliage such as ivy, nepeta, creeping jenny and even spider plant trimmings from your indoor plant. It is holiday time for house plants so they will enjoy better light in the garden. Do not be too quick to move them into full sun as a light shade suits most of them all summer except citrus plants which will relish the full sun. If you have potted up dahlias, their growth takes about six weeks to reach the soil surface. They will continue to require protection until it is certain that frost have finished. You can now sow sweet peas into a well-mulched trench adding damp newspaper which will help to retain moisture. Once the plants have started to flower you need to pick them regularly in order to keep the plants flowering throughout the summer. The more you pick, the more you get. It is time to consider sowing biennials which will flower next year. Sweet Williams, Brompton Stocks, fox gloves, campanulas, Canterbury Bells and Wallflowers will give you a wide selection from which to choose. In order to prolong the flowering period of summer perennials such as Phlox, Helenium, Sedum and Echinacea, a Chelsea Chop may be in order. By chopping off about one third of the plant at the front of the clump the back of the plant will flower first and the front will follow later prolonging the display. You can do a ‘chop and drop’ which you may consider lazy and untidy but the cuttings will remain around the clump, rotting down and providing it with nutrients. In a warm, sunny, sheltered spot with fertile soil you may like to erect a support for climbing annuals. Morning Glory (Ipomoea purpurea) is particularly good for pollinators. Mexican Cup and Saucer Vine (Cobaea scandens) produces stunning red bell-shaped blooms. The purple-pink Bell Vine, sometimes called Bell and Clapper plant, will climb well giving a good display, as will the Black-eyed Susan vine (Thunbergia alata). If time permits you can increase your supply of shrubs and climbers by taking soft wood cutting. Clematis, honeysuckle, flowering current, and hydrangea are suitable candidates for this. You do not need a propagator for protection; leaving it in a sheltered spot with a plastic bag over the top of the pot and its cutting will be adequate. ON THE PLOT Warm, moist soil is perfect for seeds to develop quickly. If you have the time, every three weeks successive sowings are ideal to maintain supplies of coriander, spinach, chard, lettuce, rocket and radish. The end of this month is the last chance to sow courgette, squash, French beans, runner beans and sweetcorn. Seedlings of celery, celeriac and Brussel sprouts can be planted out as soon as possible. Similarly, if frosts are over, young plants of courgettes and tomatoes can go in. These need nutrients to encourage their rapid growth. A feed of seaweed liquid, the evening before planting out, will get them off to a good start as the feeds wide range of nutrients include amino acids and plant hormones which deal with stress and promote growth. We are always quick to dig up weeds, although many provide an important contribution to wild life in terms of habitat, food and pollination. Chickweed offers a thick ground cover for ground beetles which in turn consume many garden pests. Dandelions flower early and provide pollen and nectar for bees, beetles, hover-flies, honey bees and butterflies. Each flower can contain up to 100 florets full of nectar and pollen. The seeds are eaten by green finches, bull finches, gold finches and house sparrows. Gooseberries have never been a favourite of mine, but I notice many bushes on the allotments. Little did I know that in the nineteenth century there were as many as 150 annual gooseberry shows in England, but now only one remains and that one – not far from us – is eight miles from Whitby at Egton Bridge in North Yorkshire. A trip to the North York Moors could take you in that direction to experience the show which is held on the first Tuesday in August. Last year a new world record was set for the heaviest gooseberry, weighing in at 65.3 grammes. The variety Invictor produces a fruit suitable for cooking and making into pies or jam. The larger red skinned dessert gooseberries can be eaten straight off the bush. Varieties include Hero of the Nile, Xenia and Hinnonmaki. The French call gooseberries groseilles á maquereau which suggests that you should eat them with mackerel. What we call French beans, they calls haricot verts, and runner beans haricots d’Espagne! Why Spanish, I do not know, and I have yet to see in France a runner bean as we know it. I have seen the flat beans which I have grown, and they are delicious. Honestly, where does all the “stuff” come from? It’s never ending. I mean I’ve always been someone who keeps things because they’re “still good quality” or “might come in handy”, but lately I’ve been much better at letting things go – partly due to Marie Kondo. I’ve spoken about her before in my column and her way of decluttering. It’s so simple. When you’re going through everything ask yourself: “Does it spark joy?” It works with anything. If it doesn’t, out it goes. But more ‘stuff’ keeps appearing!! I guess that’s life, but it can be a bit stressful! So, I’m taking it one drawer, one cupboard, one shelf at a time - because doing it all at once is a bit overwhelming! But every time a bag leaves the house, I feel brilliant. Much lighter, much calmer, less stressed. Clearing space really does clear your head too. It’s becoming my new priority. My favourite month of the year I love May. I know I’ve said it before, but it really is my favourite month. It’s my birthday, our wedding anniversary and .....we get two bank holidays! Honestly, it’s got everything going for it. We’ve got longer days, lighter evenings, the blossoms are out, summer’s on its way…. it just makes me happy. This year, we’re celebrating our 23rd wedding anniversary. I can remember it like yesterday! It’s funny how some moments stay so clear in your mind- the people, the laughter, the little details you thought you’d forget. May always brings those memories back to me, in the nicest way (and I always get our wedding album out and look through it!) It’s a month that feels full of good things.
