Call the Smokefree Helpline on 0300 123 1044 for free support. 5 MAINTAIN A HEALTHY WEIGHT Carrying excess weight around your middle makes it harder for your body to use the hormone insulin, which controls blood glucose (sugar) levels and can lead to type 2 diabetes. High levels of glucose in your bloodstream damages your arteries and increases your risk of heart and circulatory diseases. Help maintain a healthy weight by: l Walking or cycling short journeys instead of driving. l Taking the stairs instead of an escalator or lift. l Getting off the bus a stop earlier. l Including higher fibre foods and protein in your meals, such as lentils, fish, beans and chicken. l Swapping crisps, biscuits and sweets for whole fruits, vegetables, unsalted nuts and seeds. 1 SAY “NO” TO A SECOND GLASS OF WINE Experts recommend you drink less than 14 units per week. Indulging in too much alcohol can increase blood pressure and weight, increasing the risk of heart attack or stroke. Try cutting back by drinking half pints or single shot drinks rather than pints or double shots. Switch to alcohol-free versions or swap pub nights with friends for different activities. 2 EAT FOR HEALTH Having a healthy, balanced diet is important for heart health at every age but during peri- and menopause, cholesterol and blood pressure may increase and weight gain is also common. Eating plenty of fruit and vegetables, wholegrains, nuts, seeds and pulses, while cutting back on foods high in saturated fat, sugar and refined salt will lower your risk of coronary heart disease. 3 KEEP MOVING Increasing your activity levels improves heart health by improving circulatory blood flow and lowering blood pressure, plus it helps you maintain a healthy weight and reduces feelings of anxiety and stress, which may harm your heart. Exercising can seem very overwhelming if you have a heart condition or limited mobility, so start small and build up – find some examples at bhf. org.uk. Always check with your doctor if you’re new to exercise and have a heart condition. 4 DON’T SMOKE Chemicals in cigarettes make the walls of your arteries sticky. This causes fatty material to stick to the walls and clog your arteries, reducing space for blood to flow properly, which can lead to a heart attack. 8 Food & Drink To contact Telephone: 01964 552 470 • Email: ask@daltonspire.co.uk • www.daltonspire.co.uk Preparation time 25 mins plus cooling Cooking time 25 mins Serves 12 Ingredients: 225g salted butter, softened, plus extra for greasing 1 cup flaked almonds, toasted 1 cup caster sugar 1 teaspoon vanilla or almond extract Zest of 2 lemons 2 tablespoons milk 4 medium free-range eggs, at room temperature 1 cup self-raising flour, sifted 3/4 cup almond meal 1/2 teaspoon baking powder 250g raspberries FILLING 250ml thickened cream 100g mascarpone 2 tablespoons icing sugar, plus extra for dusting 1 teaspoon vanilla or almond extract Method: 1 Heat oven to 180°C/160°C fan-forced. Grease and line two 20cm cake pans with baking paper. Scatter half the toasted almonds over the base of one pan, spreading evenly. 2 In a large bowl of an electric mixer fitted with a whisk, beat LEMON, RASPBERRY AND ALMOND VICTORIA SANDWICH butter, caster sugar, vanilla or almond extract and lemon zest for 3–4 minutes, until light and creamy. Add milk, then add eggs one at a time, beating well after each addition. Combine flour, almond meal and baking powder, then fold into the egg mixture until no streaks of flour remain. 3 Divide mixture between prepared pans, taking care not to disturb the toasted almonds in the base of the pan. Level the cake batter, then push half the raspberries into the batter. Bake for 25–30 minutes or until cakes are golden and risen, and a skewer inserted into their centres comes out clean. If the mixture clings to the skewer, return cake to the oven for 5 minutes, then test again. Let cakes cool in the pans for 30 minutes, then turn out on a wire rack and peel off the baking paper to cool completely. 4 For the filling, put cream, mascarpone, icing sugar and vanilla or almond extract into a large bowl. Whisk for a few minutes, until cream is just holding its shape. 5 Put plain sponge on a cake stand or plate. Spoon over the cream filling, spreading to the edge. Scatter with the remaining raspberries and toasted almonds. Sandwich with the second sponge, almond side up. Dust with icing sugar. COOK’ S TIP You could use the finely grated zest of 1 orange instead of lemons.

By sowing seeds early on in the year, you can enjoy flowers and vegetables for a larger part of the year – the growing season can then be extended by carrying out repeated sowings from March onwards. If you have a heated propagator and grow lamp, you can start sowings of chillies, aubergines and sweet peppers in February. Otherwise, sow seeds of hardier vegetables such as kale, and hardy annual flowers such as cosmos, in pots on a warm, sunny window sill. Kale While very hardy, kale seeds need to be started off indoors during winter, as it’s too cool outside for the seeds to germinate. Sow seeds indoors in modules or 7cm pots, with 2-3 seeds per module, then thin to leave the healthiest seedling. Keep on a sunny window sill. Tomatoes The seeds of tomatoes need a minimum temperature of 10ºC to germinate, so are best started off in a heated propagator. However, if you wait until the end of the month, a sunny window sill What to plant in February should be warm enough to encourage germination, just make sure the pots or trays are covered to stop temperatures falling dramatically at night. Chillies are a good crop to start in February, but only if you have a heated propagator as most varieties need a minimum temperature of 25ºC to germinate. Sow 2-3 seeds thinly per small individual pot using seed compost. Cover to own depth with vermiculite. Aubergines Like chillies, aubergines need a minimum temperature of 25ºC to germinate, but the earlier you sow them, the longer their season of growth and the greater chance they have to fruit. Basil Basil needs a minimum temperature of 15ºC to germinate, so is best sown in a heated propagator, but you may have success on a sunny window sill from the end of the month. Sow basil thinly on the surface of pots or trays of seed compost, and cover with vermiculite. Broad Beans Sow broad beans in February for a head start on spring sowings. Sow direct outdoors if conditions are mild or if you have pre-warmed the soil using cloches or fleece. In cold conditions, sow in multi- celled trays in a greenhouse or cold frame, and then plant the young plants out when temperatures have increased. Cosmos Cosmos are easy flowers to grow and they look great in borders or meadows. The seeds need light to germinate, so sow on top of peat-free seed compost in a tray or plant pot placed indoors in a sunny spot such as a window sill, then prick out when large enough to handle. Sweet Peas Sweet peas are a stalwart of summer garden and they’re easy to grow. Sow seeds individually into biodegradable pots or cardboard tubes, as they can be planted out in their containers to avoid root disturbance. Keep them in an unheated greenhouse or cold frame and harden off before planting out.

One minute it’s leftover tinsel, the next it’s Valentine’s hearts, pancake mixes and - yes - Easter eggs already lining the shelves. I spotted a giant chocolate bunny last week and genuinely thought I’d lost track of time. Surely, we should at least get through Pancake Day before the bunnies come out to play? Pancake Day politics Speaking of Pancake Day…. are you a flipper or a folder? A lemon and sugar traditionalist (like me) or a full-on Nutella lover? I’m convinced people reveal their true personality through their pancake choices. Lemon and sugar says “classic, dependable, knows what they like.” Nutella says “fun, indulgent, probably has a sweet tooth the size of Yorkshire.” And then there are the wildcards who go savoury - ham, cheese, spinach - practically a full meal disguised as a pancake. Not my cup of tea, but I can respect their choice! What does your pancake say about you? Whatever your style, enjoy! Shrove Tuesday is a tiny celebration in the middle of winter before Lent starts – and a great reason to get in the kitchen and make a mess. And honestly, who doesn’t need that in February? Counting down to Spring This is also the month when I start getting properly excited for Spring. Not because anything dramatic is happening outside yet - it’s still a bit bare, a lot muddy and very much “keep your gloves handy in your pockets” weather - but because you can sense that shift coming. Soon we’ll have warm days when you can open the windows without freezing and the washing actually dries on the line instead of turning into a stiff board. Then the garden will suddenly wake up and everything looks greener, fresher and full of life again. We’re on the cusp of Spring, patiently waiting for colour, birdsong and that irresistible “let’s get outside” energy. I’m more than ready for it. How about you? Have a brilliant February everyone!
