Welcome to the February 2024 edition of the DNfourteen magazine - I hope that you are all keeping well and those of you with children or grandchildren are enjoying Half-Term. I’m already looking forward to the Spring and Easter Holiday as I dream of warmer weather and lighter nights. We have some interesting articles and features in this months edition ranging from a very interesting article about back pain (both myself and my hubbie are sufferers!!) in the Health & Wellbeing section. We have a delicious recipe for Cinnamon Buns which I made for my grandsons last week - they soon vanished!!! (the buns, not my grandsons!). We take a look at Winter Hair in Rebekah’s Beauty Column and there is a seasonal gardening information with What To Plant in February on page 12 and so more. Health & Wellbeing 4 The Changing approach towards Back pain Mechanical low back pain (MLBP) has been on the increase since records began. In 2020 619 million people suffered from Low back pain globally. (The World Health Organisation) Less than a percent of MLBP patients have a problem that benefits from medical investigation / intervention, leaving over 99 percent in need of physical examination / intervention; (not Xray, blood test scans etc) Health care professionals have a duty to guide patients with physical problems to physical solutions and those with medical problems to medical solutions. Over the last 70+ years we have seen medical profession trying to treat MLBP medically, when it would be better described as a fitness issue; the individual often not moving enough during a day, or not flexible enough, strong enough to do the task at hand. It is not possible to treat these issues medically, they must be treated physically. The National Institute of Clinical Excellence (NICE) guidelines have changed over the last decade; guiding us towards a solution that reduces medicalisation, and reduces medical solutions that at best are poor, encourages physical solutions that are mostly active, not passive, and steers us away from drug dependency. Not only do we need to improve patients physically, but we also need to support them, improving confidence in this process and realising that a patient can suffer increasing symptoms if they are emotionally vulnerable as well as realising that many patients are worried by the level of pain they can suffer; reassurance where appropriate has a very large value! We must not forget about the less than 1%, this is when we need the might of medical investigation. My advice is to seek the help of a practitioner who is dedicated to using evidence- based treatments, and one who understands pain using the Bio-Psycho-Social model (BPS model), a specific way of understanding pain behaviour, find a practitioner who is prepared to listen; low back pain requires a practitioner who is prepared to take time to hear your story first. The issue is, for the past 22 years the books have gathered dust on a shelf, as Sally’s daughter Ella fled to Australia after a diffi cult family split. Sally doubts the books or the notes inside the front covers – dedicated to her much loved and missed daughter – will ever be read. Then Ella is forced to return to the UK. Is this a chance to discover that when one chapter ends, another follows? Anna O by Matthew Blake This thriller doesn’t look at whodunnit or even why they did it, so much as are they responsible for doing it? The question posed is, if you kill someone while sleepwalking, are you guilty? This is a legal quagmire and much depends upon the circumstances around the crime. But Anna O’s case is made yet more complex as she suffers from a mystery (although real) illness called “resignation syndrome”, where patients fall into a deep sleep and never wake up, often after a traumatic event, possibly one they perpetrated. This thriller has been sold in over 30 territories and with this fresh and compelling plot, combined with fascinating, well-drawn characters, it is set to be a hit. 10 Recipe Local chef and foodie Erkan Sahindal says these Cinnamon buns disappear very quickly whenever he makes them at home. Ingredients: Yeast dough: 2.1 cups milk 1.8 oz (50g) fresh yeast 0.4 cup (100ml) sugar 1 tbsp vanilla sugar 1 tbsp cardamon 2 eggs 6 cups (1400ml) wheat flour 5.2 oz (150g) soft butter Cinnamon filling: 5.2 oz (150g) soft butter 4 tbsp sugar 2 tbsp cinnamon Almond filling: 7 oz (200g) almonds 0.8 cup (200ml) confectioner’s sugar 2 egg whites 2 tbsp water Cream filling: 2.6 cups (600ml) heavy cream 2 tbsp confectioner’s sugar 1 tbsp vanilla sugar Garnish: confectioner’s sugar Method: The yeast dough: Heat up the milk until it’s luke warm. Dissolve the fresh yeast in the milk and add sugar, vanilla sugar and cardamon. Add whisked eggs and half of the flour. Mix everything in a food processor for a couple of minutes, then add the rest. Add soft butter little by little. The dough has to be smooth. Mix it in the food processor for 10 minutes, then allow it to rise for 1 hour. Roll out the dough to make a big rectangle (approx. 11.8 x 15.7 inches/30 x 40 cm). Prepare the cinnamon filling by mixing soft butter, sugar and cinnamon, and spread the cream onto the dough. Roll up the dough from the long side, cut the roll into slices and make the buns. Let the buns rise again for 30 minutes. Bake them in the oven at 437°F (225°C) for approx. 10 minutes until they turn golden. Almond filling: Grind the almonds and mix them with confectioner’s sugar, egg whites and water to create a thick, tough paste. Cream filling: Beat the heavy cream along with confectioner’s sugar and vanilla sugar to create a thick cream. Before serving, cut the cinnamon buns in half. Spread almond filling onto the bottom half. Using an icing bag creates the nicest result. Distribute a thick layer of the cream filling on top of the almond filling – preferably using an icing bag – and arrange your buns on a serving dish. By sowing seeds early on in the year, you can enjoy flowers and vegetables for a larger part of the year – the growing season can then be extended by carrying out repeated sowings from March onwards. If you have a heated propagator and grow lamp, you can start sowings of chillies, aubergines and sweet peppers in February. Otherwise, sow seeds of hardier vegetables such as kale, and hardy annual flowers such as cosmos, in pots on a warm, sunny window sill. Kale While very hardy, kale seeds need to be started off indoors during winter, as it’s too cool outside for the seeds to germinate. Sow seeds indoors in modules or 7cm pots, with 2-3 seeds per module, then thin to leave the healthiest seedling. Keep on a sunny window sill. Tomatoes The seeds of tomatoes need a minimum temperature of 10ºC to germinate, so are best started off in a heated propagator. However, if you wait until the end of the month, a sunny window sill What to plant in February should be warm enough to encourage germination, just make sure the pots or trays are covered to stop temperatures falling dramatically at night. Chillies are a good crop to start in February, but only if you have a heated propagator as most varieties need a minimum temperature of 25ºC to germinate. Sow 2-3 seeds thinly per small individual pot using seed compost. Cover to own depth with vermiculite. Aubergines Like chillies, aubergines need a minimum temperature of 25ºC to germinate, but the earlier you sow them, the longer their season of growth and the greater chance they have to fruit. Basil Basil needs a minimum temperature of 15ºC to germinate, so is best sown in a heated propagator, but you may have success on a sunny window sill from the end of the month. Sow direct outdoors if conditions are mild or if you have pre-warmed the soil using cloches or fleece. In cold conditions, sow in multi- celled trays in a greenhouse or cold frame, and then plant the young plants out when temperatures have increased. Cosmos Cosmos are easy flowers to grow and they look great in borders or meadows. The seeds need light to germinate, so sow on top of peat-free seed compost in a tray or plant pot placed indoors in a sunny spot such as a window sill, then prick out when large enough to handle. Sweet Peas Sweet peas are a stalwart of summer garden and they’re easy to grow. Sow seeds individually into biodegradable pots or cardboard tubes, as they can be planted out in their containers to avoid root disturbance. Keep them in an unheated greenhouse or cold frame and harden off before planting out.

14 Fiona’s Word Fiona Dwyer, broadcast journalist, PR & media consultant, slave to 2 children and a husband. Easter eggs – already? They’ve got Easter Eggs in the shops already – and they’ve been there since January! Lent doesn’t start until mid-February. Honestly, I don’t get it. Aren’t seasonal aisles meant to be seasonal? We’ve got Shrove Tuesday and Valentine’s Day coming up in February so isn’t that enough to be getting on with? Easter’s not until March 31st so bring out the Easter Eggs next month or at least later on this month. What do you think? Am I being too picky? Blinded by the lights Anyone else finding it hard to drive at night because you’re getting blinded by the headlights? They are so much brighter nowadays. In fact, a recent RAC survey found that 85% of drivers were affected by headlight glare and said that dazzling headlights are causing a “danger for oncoming drivers” and increasing the risk of accidents. It’s all because vehicle lights are using LED rather than halogen bulbs now. So, while they are brighter, more intense and may be good for the driver it’s a problem for other road users. It can also be because of the increased number of people with SUVs – their lights shine right at your face if your car sits lower on the road. Incidentally, it used to be polite to dip your headlights when you parked facing traffic. Nobody seems to do that anymore! Is it because a lot of cars have automatic lights so you forget to dip them? This definitely blinds me when I’m driving, so if you don’t already do this, please think about it next time you pull up. Thank you. Looking forward to Spring I can’t wait for brighter mornings, longer days and less gloomy weather! I love Spring. It’s such a refreshing season. It’s all about new beginnings, seeing the snowdrops, daffodils and tulips come up, seeing the lambs in the fields and having a good spring clean at home.
