Local News Beverley Cultural Network is a new voluntary working group, and its development has been funded by the UK government through the UK Shared Prosperity Fund. We are in the process of producing an action plan that will help to raise the profile of cultural organisations, events and activities in Beverley. Over the past six months East Riding Theatre has been the lead organisation in helping create this new network. Our ambitions are shared by a number of partners within Beverley from the private sector, digital, education, health and voluntary sectors, and this has a wider strategic reach. Development of the network is ongoing, and we hope to bring more opportunities to those who are interested in participating later this year. The election is set for Thursday 2 May 2024 and eligible voters within the Humberside Police force area can participate. All eligible electors will receive poll cards over the next few days. Humberside Police covers four local authorities: East Riding of Yorkshire, Hull City Council, North Lincolnshire, and North East Lincolnshire. With a diverse population with varied policing needs, residents are urged to familiarise themselves with new voting laws to engage in this essential democratic process. Alan Menzies, interim chief executive of East Riding of Yorkshire Council, is appointed as the police area returning officer for Humberside. In his role, he ensures the fair conduct of the election. Those interested in running for Humberside Police and Crime Commissioner can submit nomination papers from Tuesday 26 March to Friday 5 April 2024. Nomination process details are available on East Riding of Yorkshire Council’s website, and a list of candidates will be published on Monday 8 April. The Election Act 2022 now requires voters to present an acceptable form of photographic evidence to be able to vote in person at this election. Whether you’re thinking of working with a kitchen supplier, or going it alone with your design, we don’t want you to fall victim to those kinds of potentially expensive errors. So, these are some of the most common mistakes in kitchen design and how you can avoid them. Underestimating the need for storage The first common kitchen design mistake we see a lot involves the creation of an absolutely beautiful- looking space… that lacks anywhere near enough room to store everything! And when you think about it, that just doesn’t work at all. A kitchen is, first and foremost, a practical space. We’re all for style, but you need some substance, too. Leaving enough cupboard and wall space for your pots, pans, crockery, cutlery, food, counter-top appliances, quirky little gadgets, and some decorative elements can leave you a lot to think about. Not leaving enough practical space The need for practicality also extends to the most basic elements of kitchen usage. It’s no good having a beautiful space with enough storage for every item and foodstuff, but nowhere practical to chop food, mix ingredients, cook, plus wash items and leave them to drip-dry. Add in that fact that in some kitchens you’ll also want somewhere to eat, relax and socialise. Not factoring in all of these things and weighing up their importance to you before you start designing, is another common kitchen design mistake to avoid. Common Kitchen Design Mistakes to Avoid Going for a ‘flavour of the year’ design that dates easily A brand-new kitchen is a big commitment, not to mention an expensive one. The last thing you want is a space that looks funky and fresh now but looks out of date just a year or two down the line! While it is perfectly possible to bring in modern kitchen design ideas, we like to fuse them with a classic finish that gives the space a timeless look. For instance, the industrial look is a firm favourite with a lot of our customers because a brush- metal finish on your worktops and breakfast stools is never going to go out of fashion. House & Home Continued page 10 popular, these evergreen looks will always look great. However, if you decide to design it around a particular era instead, that could be a mistake. You might find that 70s-style kitchen that was so en-vogue when you had the idea ends up looking like something you’d rather see on TV than prepare a TV dinner in yourself. Likewise with duck egg blue kitchens, which were all the rage a few years ago but have quickly dated. Take our advice: think ahead and don’t leave yourself with more expensive changes to make a few years later. Not factoring in the working triangle The theory behind the kitchen (golden) triangle is that the locations of your fridge, sink and cooker should form the three points of a triangle. This helps with flow as you move from food prep to cooking to clearing up afterwards, and also allows for more than one person to be in the space at a time doing different things. Ignore this approach with your design, and you’re likely to have people walking into each other, or end up falling over yourself as you try to cook food in the same space where you have the dishes piling up. Definitely not a good idea. Not going big enough on the lighting The kitchen is typically the heart of the home, so it makes sense that you’d want it to feel warm, inviting and bright – any time of the day or night. One of our favourite aspects of kitchen design is that there are several different ways to achieve this. Low-level lighting, when used correctly in the right places, can come together to brighten the spaces you need it to – from your food prep space to your eating area. Alternatively, you may want to go for a single source of light, as you would in other rooms in the house. If so, then pendant or strip lighting can both be equally effective depending on the style of kitchen you prefer. Whatever you prefer, make sure you avoid the common kitchen design mistake of not giving your kitchen enough light – you’ll be grateful for it down the line. Forgetting to use the vertical space This kitchen design mistake to easily avoid goes back to the piece on storage above – but you’d be amazed how many old, tired kitchens we see that don’t fully consider the vertical space. There are different trains of thought on this. One is that your wall cupboards should extend as far upwards as possible in order to maximise internal storage space for food and crockery. The other is that the area on top of the cabinets can also be incredibly helpful for storing the larger appliances you may pull out in certain seasons or on special occasions. House & Home Either way, the important thing is that you give some consideration to how you’ll use the vertical space and factor that into your design. The same is true with things like spice racks, magnetic knife strips, and internal shelving. Deciding against getting professional help We love a little Sunday DIY as much as anyone, but there’s a big difference between adding an extra shelf to a cupboard or fitting a bin to the inside of an under-sink door, and singlehandedly tackling a complete kitchen redesign. It’s not just about aesthetics and the practicalities of kitchen design that we’ve mentioned above, either. A kitchen is chock-full of behind- the-scenes systems like electrics, plumbing and even ventilation, and putting a drill in the wrong place or fitting the wrong part, could have potentially expensive (and even dangerous!) consequences. When it comes to these areas, we’d always suggest seeking the aid of expert tradespeople who know what they’re doing. Good riddance to throwaway design - second-hand furniture is the new status symbol transcending trends. From Michel Ducaroy’s low-slung Togo sofa to 1970s mushroom lamps; wavy Fragola mirrors by Ettore Sottsass to the retrofabulous vibes of the Mario Bellini Camaleonda sofa, classic vintage design can be found in the homes of tastemakers across the globe. You’ll come across these favourites in the pages of glossy magazines, as you scroll through decor-porn on social media, and even on ads on London’s public transport for Vinterior - the largest pre-owned furniture platform in the United Kingdom. The appetite for vintage is insatiable: launched in 2016, Vinterior now has more than 2,000 vetted sellers from 30 countries and in 2021, raised £8 million in funding. Seven years ago “it was all about Danish design, Hans Wegner and teak”, Sandrine Zhang Ferron, a co-founder, recalls. Teak fatigue has set in and shoppers now have far broader tastes. “Now, velvety textures and bouclé are everywhere.” What else is on the wish list? “There’s no fatigue for Togo - it is an investment piece,” says Lucy Ward, Vinterior’s brand director. “People are also searching for the Scoop chair from Terence Conran, another 1970’s design. Mid-century remains popular - it’s often entry point when [people] start shopping pre-owned - but what’s exciting is that we are seeing people becoming more confident and branching out into other styles such as art deco, British antiques and postmodern design; the latter has resonated on TikTok and Instagram,” Ward says. “Modernist British maker G Plan is very popular and a lot of people are diving into vintage Heal’s - everyone wants the Heal’s 1930s’ drinks cabinet. People love Italian postmodern designers -the 1960’s Carimate chairs and the Maralunga sofa and chairs by Vico Magistretti,” she adds. The usual rite of passage for antiques lovers includes getting up super-early to swipe the good stuff at specialist fairs such as the Beverley Vintage & Retro Fair at Beverley Minster (Saturday 22nd April), but brands such as Vinterior are part of a wave of disrupters changing the way we find and shop for second-hand items. “We are moving away from the image of stuffy shops to something that is fun and approachable,” Zhang Ferron says. Most pieces on Vinterior’s website are in the mid to high-range price brackets but “there is something for all purses. We definitely cater for people who want to upgrade from Ikea.” The biggest issue facing online disrupters is that buyers can’t touch and feel the product, something Vinterior is tackling by partnering with Selfridges on Oxford Street in London for a three-month pop-up shop starting this month. The curated edits will feature brands including Ercol, G Plan and Ligne Roset, And span art deco, mid- century modern and antique; prices for furniture start from around £150. Besides Vinterior there are more ways to shop vintage besides charity shops, car boot sales and reclamation yards. Online competitors include the French platform Selency.co.uk (offering the Brocante experience from your laptop) and 1stDibs.com for high-end antiques, art and collectors’ pieces from global dealers. Catawiki.com is a sort of curated eBay based in Amsterdam. Think Persian rugs, Belgian bookends and bonsai plants, as well as brands such as Alessi, Cassina and Fornasetti. Note the 10 per cent auction fees and additional delivery costs; you may need to pay extra for duties and levies. Narchie.com is a shopping app aiming to “transform flea market shopping into a digital experience”. It replicates “a real market experience” with its “make an offer” function making it speedier and easier to negotiate the right price. If you prefer to shop in person, then the East Riding has a large number of antique dealers, auction houses and reclamation yards for you to peruse. Instagram can be a brilliant resource for scouting out local gems too. Obviously, water is vital for your body and health. but it’s also important for your skin! The more hydrated you are the easier your skin will find it to retain moisture. Drinking more water can also increase blood flow to your skin, which evens out texture and your complexion. Water also assists in improving the elasticity of your skin which helps all over! Grab a water bottle with time stamps on it - this can help ensure that you hit your goal every day - and you’ll soon see the difference Sleeping Beauty A good night’s rest is one of the simplest tasks to help you achieve a natural beauty routine. The stress hormone cortisol is lowest when you’re asleep and lust happens to be something that can cause a loss of collagen - a protein that gives structure to your skin. Shiny bright smiles It sometimes feels that bright, unnaturally white teeth surround us in the media and our self-esteem can suffer as a result. Many home whitening treatments are more dangerous for your teeth than we think - many can be too harsh, creating sensitivity problems that didn’t exist before. If you’d like to lighten your teeth, there are natural ways to do so. A paste of baking soda and hydrogen peroxide, while sounding a bit scary, is a really easy way to brighten your smile. Make sure you use a low percentage hydrogen peroxide (no more than 3 percent) and make sure you carefully remove the paste with a water rinse. Only use the paste a few times a week to avoid any risk of damaging your tooth enamel. Try using rice to tend to your hair Women in Japan have been washing their hair in rice water since the Heian period (794 to 1185). Rinse a cup of rice, then soak it in a cup of water until the water becomes cloudy. Strain the rice and retain the water for 24 hours at room temperature, refrigerate it and then use as a rinse after applying conditioner. Exfoliate naturally If you want a natural way to look after your skin, make a natural exfoliant to help remove dead skin cells from your body. Physical exfoliants work by sloughing off dead skin cells through rubbing or massage. It’s important to remember that the skin on your face is much more delicate to that on your body, so don’t be too rough when applying the exfoliant. Natural exfoliants can be something as simple as coffee grounds or porridge flakes. Add natural oils like coconut or jojoba to bind the scrubbing ingredients. Use gentle circular motions when massaging your body and be careful not to over-exfoliate. A small amount of baking soda, mixed with honey and nourishing oils, makes a fine facial scrub. There are so many other foods that keep you healthy and beautiful inside and out, but remember everything is best in moderation. Don’ pick This is a tough one. The urge to pick and prod at our skin is often a temptation that can be hard to resist. Squeezing spots can easily lead to more spots developing and spreading. In fact, the squeeze can actually spread the infection around the skin instead of pushing it out! With larger cyst-like spots, squeezing can push the bacteria deeper into your skin. It’s also important to remember that when you bring your fingers to your spots that you’re actually adding new dirt to your skin. This can infect what was once a small simple spot! Plus, making a larger hole in your skin where the spot was can sometimes lead to scarring. The next time you find yourself going to prod at your face or body, stop and ask why you are picking at your skin - is it simply a part of your beauty routine or something more serious like a compulsion? If you can use distraction methods to stop your picking. or promise yourself a reward if you get to x days / weeks / months without picking and prodding, your skin will certainly thank you! Always remove your makeup While it’s not the most exciting natural beauty rule, it is one of the most important ones. If you’re a person who wears makeup, get in the habit of removing it before heading to bed. Put simply, sleeping in your makeup will cause damage to your skin. Our skin renews overnight and by keeping that extra layer of old product on your skin, you’re preventing this from happening. Signs of fatigue also become more obvious. Some makeup products are made of oils, which clog pores and can cause blemishes. Remember to thoroughly - but gently - cleanse your skin before bed and apply a moisturiser to assist in the overnight renewal. Try to avoid makeup remover wipes as they can be harsh to skin and are also not the most eco-friendly option. Muslin cloths can be used with an oil-based cleanser to remove stubborn products, then you can double cleanse with your favourite foaming wash. Your circulation is also boosted, increasing the blood flow and oxygen supply to your skin, which removes toxins. What’s more, improved blood flow promotes healthy hair growth. Working out maintains a healthy level of the stress hormone cortisol. Too much stress and cortisol can lead to acne, in addition to a reduction of collagen. Remember to pack a muslin cloth in your workout bag to cleanse your face, and other areas that can suffer breakouts, after your session. Exercise gives something that cannot be overstated: endorphins. Endorphins trigger a positive feeling in the body, which can sometimes be described as euphoric. Feeling good about yourself is the greatest beauty secret of all. Love Yourself Confidence is paramount. Beauty rules* change all the time - what is in style one week will be passe the next, especially with fast- moving trends from social media. It’s important to take stock of what makes you unique, what you love about yourself and then OWN IT! This isn’t an easy fix, and you may feel a bit of a fraud at the start of this journey. Stop worrying about what others think of you, focus instead on what you want to communicate, whether through your words, actions or the way you present yourself. Hands and Nails There are so many ways to keep your nails looking beautiful without unnecessary chemicals and expensive treatments. Try to keep your nails short (you’ll know the right length for you) to avoid painful breaks or the temptation to bite! Keep your hands moisturised and never cut your cuticles. Cuticles are living skin and trimming can encourage infections. If you find the whites of your nails tend to stain due to cooking or general day to day wear, mix up a paste of baking soda and water and gently scrub under and around each nail. Remember to wear gloves when doing dirty jobs! Wear your sunscreens We all know that we must wear our sunscreen on days that are both burning hot and overcast. But many mainstream sunscreens are packed with irritating compounds that can interfere with our bodies. If you prefer to use ‘cleaner’ products on your skin, there is a wide range of more natural mineral sunscreens on the market. These sun-blocks use minerals such as zinc oxide and titanium dioxide as active ingredients. These minerals sit on top of your skin and protect it by reflecting away UV rays, in opposition to chemical sunscreens that absorb UV rays, then dissipate them through a chemical reaction. Nourish Nutrition is vital for natural beauty. An unhealthy diet not only damages your organs and metabolism, but also your skin and hair. It might therefore seem counterintuitive to eat fat to stay healthy but one of the best foods for your skin and hair is fatty fish. Fish such as salmon, herring and mackerel are sources of omega-3 fatty acids, which keep our skin moisturised and reduce redness. Along the same lines, healthy fats can also be found in avocados, walnuts and sunflower seeds. Maintaining healthy skin and hair is not just about eating avocado toast every day, however. Beta carotene is a really interesting pigment in vegetables that is converted by our bodies into vitamin A, which is then incorporated into skin to help protect skin cells from sun exposure. Food & Drink Erkan Sahindal - business owner at the Olive Tree on Lincoln Way, Beverley - and accomplished chef shares his recipe for a traditional dish of lamb and mediterranean vegetables. Serves 4 Prep 15 mins Cook 30 mins Ingredients 1 tbsp olive oil 250g lean lamb fillet, trimmed of any fat and thinly sliced 140g shallots, halved 2 large courgettes, cut into chunks 1⁄2 tsp each ground cumin, paprika and ground coriander 1 red, 1 orange and 1 green pepper, cut into chunks 1 garlic clove, sliced 150ml vegetable stock 250g cherry tomatoes a handful of coriander leaves, roughly chopped Method 1 Heat the oil in a large, heavy- based frying pan. Cook the lamb and shallots over a high heat for 2-3 mins until golden. Add the courgettes and stir-fry for 3-4 mins until beginning to soften. 2 Add the spices and toss well, then add the peppers and garlic. Reduce the heat and cook over a moderate heat for 4-5 mins. 3 Pour in the stock and stir to coat. Add the tomatoes, season, then cover with a lid and simmer for 15 mins, stirring occasionally until the veg is tender. Stir through the coriander to serve. Erkans’ Mediterranean Vegetables with Lamb A quick and easy dish to prepare and cook makes this recipe an ideal evening meal after a busy day in the office. It is full of healthy vegetables and a great source of ‘Vitamin C’ plus three of your 5-a-day. Serves 6 Prep 30 mins Cook 1 hour Ingredients 30g dried porcini mushrooms 500ml double cream 500ml vegetable stock 1 bay leaf 750g flat mushrooms, finely chopped 2 tbsp olive oil 2 tbsp chopped flat-leaf parsley 1 egg 10 large fresh lasagne sheets (or 15 small sheets) 25g butter, softened 150g parmesan (or vegetarian alternative), grated Method 1 Pour boiling water over the porci- ni to just cover. Put the cream, stock and bay leaf in a large pan, bring to a simmer, then cook until reduced by half. Remove the porcini, leave to cool a little, then squeeze dry and finely chop. Pour the porcini soaking liquid into the cream through a sieve, and cook until thickened to the consist- ency of double cream. Remove the bay. 2 Cook the flat mushrooms and porcini in the oil in a pan until browned. Stir in the parsley and set aside to cool. 3 Heat the oven to 200C/180C fan/ gas 6. Pour the porcini cream into a blender, whizz, add the egg and whizz again. Boil the pasta for 1-2 mins and drain really well. Brush a baking dish (about 20 x 30cm) with butter and add one layer of pasta, cutting the sheets if you need to. Ladle the porcini cream over, then sprinkle with parmesan. 4 Scatter with the mushroom mix, then add another pasta sheet. Con- tinue layering pasta with cream, cheese and mushrooms, finishing with pasta topped with cream and cheese – you’ll need about 4-5 layers. Bake for 30 mins, or until bubbling and golden brown. The easiest changes to stick to are the simplest ones. Whether that means consuming less meat, choosing wholegrain carbs over their white counterparts or even just upping your intake of leafy green vegetables, there are plenty of ways you can tweak your diet to give your health a boost, as nutritional therapist Kate Arnold explains. 1. Lentil bolognese “One way of reducing your consumption of red meat is to use puy lentils in place of beef or lamb mince in a shepherd’s pie or bolognese sauce,” says Kate. “You can still include all the usual ingredients (think: onions, carrots, tomatoes and mushrooms) but just replace the mince with dried puy lentils and cook them up with the vegetables for around 25-30 minutes. Lentils provide a good source of protein to support energy balance and are full of fibre to benefit the overall health of your gut. 2. Root veg mash Scoring high on the glycaemic index (GI), potatoes – particularly when mashed – release sugar quickly causing a rapid rise in blood sugars, followed by a subsequent ‘crash’. “Swapping your favourite mash potato to a lower GI option made from sweet potato or celeriac can make you less inclined towards winter hibernation,” says Kate. “Sweet potato is also an excellent source of beta-carotene, an antioxidant which the body converts into vitamin A to support healthy skin, immune health and vision.” 3. Cauliflower rice/pizza “Cauliflower is another useful ingredient and you can use this to replace rice by either grating or blitzing it in a food processor and placing into a frying pan, cooking it gently with a bit of coconut oil or stock until it’s soft,” explains Kate. “You can also use cauliflower to replace a flour pizza base by grating or blitzing it, cooking it for five minutes and then squeezing all the moisture out of it with a clean tea towel. Mix with 100g of ground almonds, two beaten eggs and some dried Mediterranean herbs. Line a baking tray with baking parchment and grease with oil. Place the cauliflower mix into the centre of a baking tray lined with greased baking paper, then spread out into a circular shape. To make a ‘crust’, just make it a little thicker at the edges then bake in the oven for 15-20 minutes until golden. Then you can add your yummy topping and heat up in the oven. Cauliflower is a cruciferous vegetable and contains lots of gut-friendly fibre and immune- boosting vitamin C. Replacing a normal pizza base with cauliflower helps to reduce your intake of commercial white wheat flour and is a lovely low-carb option for an evening meal – and a neat way to increase your overall daily vegetable intake.” 4. Kale crisps Kale crisps are a fabulous potato crisp replacement and are tasty and simple to make. “Cut the leaves from the kale stalks and then rip the leaves into smaller bite size pieces,” says Kate. “Massage with olive oil and spread out onto a baking tray – bake in the oven for 10 minutes on 180C/350F/Gas 4. Then add a little sprinkle of salt Easy Ways To Eat Healthily before serving. Kale is another cruciferous vegetable containing fibre, vitamins C and K, iron and calcium. Unlike commercial crisps, homemade kale crisps aren’t ultra-processed either, so won’t contain any added sugar, salt, fat or preservatives which have been linked with obesity, type 2 diabetes and high blood pressure.” 5. Courgetti Another way of increasing your vegetable intake is to use courgetti or courgette strips to replace spaghetti or linguine. “Use a vegetable peeler to peel strips of courgette and blanch them in some boiling water for a couple of minutes before heaping over some delicious bolognese sauce,” says Kate. “Again, this is a lower carbohydrate option than pasta and also increases your daily intake of vegetables. Courgettes have a high water content, so they can support your hydration. They also contain potassium, which may help to support heart health.” 6. Quinoa “Quinoa makes a wonderful replacement for couscous, long grain and Arborio (risotto) rice,” says Kate. “While it may take a bit more time to cook, it is a complete source of protein – containing all nine essential amino acids – and is packed with fibre, vitamins and minerals. You can use it cold for salads or warm with tagines like you might do with couscous. By adding herbs, finely chopped vegetables and cooking it in a little stock, you can give it a more intense flavour.” 7. Creamy cashew sauce Blitzed cashew nuts can make a healthy alternative to a creamy pasta sauce. “Just soak 150g of cashew nuts for a couple of hours and then blitz up in a food processor with 473ml of water or stock and a clove of garlic,” advises Kate. “Add extra ingredients to draw out the flavours, such as pesto or chilli flakes. Heat and dollop over some of the lovely courgette pasta mentioned above! This creamy sauce is a great vegetarian or vegan option for pasta. Nuts are a good source of vegetarian protein and healthy fats, which contribute to a varied nutrient intake. The easy-to- make roasted rice powder is essential to the sauce, adding a toasty flavour and crunchy texture.” Serves 4 Hands-on time 15 minutes, plus overnight marinating and resting Grill time 1½ hours Specialist kit Spice grinder or pestle and mortar; kitchen scissors; barbecue Ingredients • 2–2.5kg whole free-range chicken • Steamed rice and lime wedges to serve For the marinade • 3 tbsp chopped coriander, roots and stalks • 1 garlic bulb, cloves peeled • 2 tbsp light brown sugar • 30g fresh turmeric, grated • 2 tsp white peppercorns • 3 tbsp fish sauce • 1 tsp dark soy sauce For the nam jim jaew • 1 tbsp glutinous (sticky) rice • 2 small Thai shallots (or 1 regular shallot), thinly sliced • 1 spring onion, green part only, thinly sliced • 2 tbsp fish sauce • 1-2 tbsp light brown sugar • 3-4 tbsp lime juice • 1 tbsp chilli flakes (or to taste) Method 1 To make the marinade, pound the coriander roots and stalks, garlic, sugar, turmeric and peppercorns to a paste in a pestle and mortar, then mix in the fish sauce and soy sauce. 2 Spatchcock the chicken by cutting either side of the backbone with kitchen scissors. Remove the bone, turn the bird over, then open it out and press down firmly with the heel of your hand to flatten). Rub the marinade all over the chicken, then cover and marinate in the fridge overnight. 3 Toast the glutinous rice in a pan or wok over a medium heat for about 10 minutes, stirring continuously to stop it burning. It should have an even golden colour. Let the rice cool, then grind to a coarse powder in a spice grinder/pestle and mortar. You want to retain some of the Thai Gai Yang Chicken crunchy texture, so take care not to grind it too finely. 4 When you’re ready to cook, prepare the barbecue for indirect cooking with the coals banked to one side. When the coals are ready, almost close the vents, leaving just a small gap at the top and the bottom. Wipe any large clumps of marinade off the chicken and cook the bird away from the coals, breast side up, with the legs facing towards the hotter side, for 1½ hours. You may need to move the chicken during cooking so it barbecues evenly. 5 To make the nam jim jaew, combine all the ingredients with the toasted rice powder in a bowl. Let the chicken rest somewhere warm for 15 minutes before serving it with the dipping sauce, steamed rice and lime wedges. No BBQ: Heat the oven to 180°C fan/gas 6. Put the marinated chicken in a large roasting dish or lipped baking tray and cook, skin- side up, for 50 minutes or until the juices run clear, or a probe thermometer pushed into the thickest part of the thigh reads 70-72°C. Complete the recipe. Ingredient Tip: I always use fresh turmeric but you can swap 2 tsp dried turmeric for 30g fresh. Top Tip: Store leftover nam jim jaew in a jar in the fridge for several days. Are you a traveller who enjoys immersing yourself in a destination or do you just like to pop a pin on the map? I am definitely the exploring type and enjoy returning home feeling I have seen sufficient to tick it off my bucket list and move on to new destinations. Last month I visited Northern Cyprus for a week, not wanting it too hot just comfortable to enable me to full fill my sightseeing yet still return home rejuvenated and glowing from the sunshine. Until recently you had to travel via Turkey to access Northern Cyprus now with a new agreement between the North & South we can now travel direct from the UK to Larnaca or Paphos then travel over the green line via a check point in Nicosia the Islands capital. the average transfer time is 2 hours from Larnaca we opted to fly to Paphos on nice day flights our transfer time to our hotel was just over 3 hours and luckily the queue at the check point to cross was not too busy. Having been intrigued by Northern Cyprus for a number of years, previously visiting the green line that divides the North & South and spotted show rooms abandoned yet still housing the original cars! In my collection of post cards I have cards from the 60’s of the beach at Famagusta, known as Varosha the ghost city, full of people enjoying the sand & sea. This area has been left untouched since 1974 and it is sad to see the abandoned buildings of a once thriving resort. The week was enriching as we toured all areas spanning East and West. Being based in the city of Kyrenia, (much larger than I envisaged) an ideal base for touring. The harbour is very pleasing to the eye as (shown above) and the Castle with a rich past worth a visit. There is a good selection of accommodation, we stayed at the 4 star Pia Bella on a half board basis, the rooms were excellent, staff could not do enough for you, the food was all buffet enabling you to try local dishes with a good variety of fruit & vegetables. Like many hotels in Norther Cyprus they had a Casino resembling Las Vegas! Out and about we enjoyed a good mix of sightseeing, it was lovely to see oranges & lemons on the trees and blooming flowers too. Our most relaxing day was to the Karpas Peninsular, a lovely drive through the National Park with deserted beaches. At the end of the road was a Monastery, I felt it was quite a strange place, it had wild donkeys, stopping vehicles, wanting to be fed and one even tried to nudge me down some steps whilst I was taking its picture. A large daily market was there too! Our tour would not have been complete without a visit to the capital Nicosia split into two by the green line dividing the North & South. We walked the old town, seeing market places, the first mosque built, the old Buildings from the British occupation along with traditional homes of days gone bye. Passports in hand we walked over the check point to the Greek side receiving a Turkish Cypriot Stamp in our passports before enjoying a spot of lunch in the sunshine. The Roman ruins at the ancient coastal city of Salamis took me by surprise, they were amazing, a roman bath house, a gymnasium with colonnades and a magnificent theatre. Apparently much of the site still lies submerged beneath the sea & sand dunes. We also visited the Roman and Byzantine remains at the excavated city of Soli where the mosaics where splendid, unfortunately the amphitheater lost many of its original stones when the British were building the Suez Canal! Cyprus has been ruled by so many and still seems not quite settled! St Hilarion the ruins of this magnificent mountain top castle, was reached by walking up over 400 steps to get to the top. The views were fantastic and well worth the effort. Before our tour came to an end, we visited the small town of Bellepais an idyllic spot that celebrated writer Lawrence Durrell’s made his home for 3 years writing his novel Bitter Lemons. Pets I’m at my local butcher’s shop in Beverley, inquiring about the freshest cuts of meat. The friendly gentleman behind the counter patiently helps me decide, wraps up a steak then asks, “Special occasion?” It’s my dog’s birthday. I don’t even eat meat. I’m not alone in spoiling my pooch. A whopping 64% of us cook our pets a separate meal at least three times a week, according to recent research. If that’s not dog math, I’m not sure what is. I grew up in what we called an “animal family,” which meant that no matter how many pets we had, my parents would take in any strays they came across. Over the years, we had a Great Dane called Oscar, a three-legged Goat, a Carrion Crow, countless small animals and five Cats. But these weren’t pampered by any means they were just regular pets. Oh, how times have changed. My mother and grandmother, who now live together and jokingly call each other the doggie sisters, have just one pup: a feisty greyhound who lives better than I do. To them, Bobby isn’t a dog - he’s my brother!! He gets Greek yogurt for breakfast, a steak burger for lunch and dog cookies in between for being a good boy (boy, not dog). Meanwhile, my mother-in-law makes her own food from scratch (vet-approved, of course) for her beloved Rough Collie, Missy, who lazes the days away in front of a fireplace. My own senior pooch, an Irish Wolfhound named Fergal (I grew up listening to the Undertones), has a subscription to a service that delivers human-grade meals to our doorstep. My dinner, on the other hand, is usually a slice of pizza or some sad leftovers. I guess it’s safe to say that we’re still an animal family. So, when did our furry friends start eating like humans — only better? A recent study found that “most pet owners reported giving equal (53.1%) or more priority (43.6%) to buying healthy food for their pets compared with themselves.” As in: No, Fido, you take the last scoop of caviar. Remember those television commercials with a white-gloved waiter revealing what must certainly be a gourmet meal? Instead, it’s a crystal dish piled high with — surprise! — cat food. My friend Ramona in Beverley, emulates this in real life. Her blue Burmese, Millie, has an only-for-her pink crystal dish for her freeze- dried chicken as well as her own stroller, baby seat, doll crib and human toddler chair. Millie’s first birthday party was practically purrfect, complete with a tiny treat- filled piñata and glam gifts like a princess carriage and a pop-up play tent. In Walkington, Kayleigh Austin feeds her Siberian husky, Dakota, whatever she’s having for dinner, off a dinner plate of her own: chicken, salmon, even fish and chips on a Friday!! Dakota also enjoys sushi, which Kayleigh plops into the pooch’s mouth using chopsticks (obviously). “She’s here for a good time, not a long time,” Kayleigh says of her pampered pooch. This raises a fair question: Is human fare actually better for our pets? Veterinary surgeon Trinnie Heath, has a hot take. “It’s extremely unlikely that home cooking all your pet’s meals will give them a balanced, healthy diet,” She explains. “My advice is to choose food made by a brand that employs a certified veterinary nutritionist, so you know they have the expertise to ensure their products are balanced and healthy.” But that doesn’t mean it’s a faux paw to have a little foodie fun with our pets. Around the world, high-end hotels are cashing in on the craze. The Mark Hotel in New York boasts amenities like pet beds, dog bowls and its signature Woof Woof Kit with a collar, a water dish, waste bags and other extras. But it’s the Spoilt Dog Menu that takes the cake. Curated by esteemed chef Jean Georges Vongerichten the in-room dining offerings include the Healthy Bite (salmon with a cucumber, apple and spinach salad) and the Svelte Pup (hard-boiled eggs, steamed rice and mixed market vegetables). If you think that’s rich, the five-star Egerton Hotel in London boasts a Doggie Tea Service in its posh dining room. The afternoon delights include chicken liver and beef meatloaf paired with peanut butter biscuits and carrot cupcakes. The dog-tini, meanwhile, is crafted with chicken consommé and garnished with a meat skewer. And don’t forget dessert. Pupper Cup ice cream is made exclusively for pooches. This coconut-based sweet treat is swirled with ingredients like salmon, peanut butter and blueberries. Founder/ CEO Kelly Crooke admits she is typically less spoiled than her four- legged clients. “I’ll be roasting a wild-caught salmon fillet for Pupper Cup then go make a sandwich for myself,” she jokes. She really kicks it up a notch for holidays and other special occasions — think roasted filet mignon with carrots. Sign me up for that Christmas dinner! So, what’s the final verdict from our vet? “It’s absolutely fine to spoil you dog, and this sounds delicious enough for humans as well!” Heath concludes. “The occasional treat like this is a wonderful way to indulge them and share a lovely bonding experience.” That’s all the pawsitive reinforcement I need. For Fergal’s next birthday, I’ll be treating him to a bacon Pupper Cup. But I draw the line at blowout bashes, hotel stays and OTT gifts - because he is just a dog, after all. Just don’t tell him that! Another safety enhancement will be the Active Hood, designed to improve pedestrian safety. At speeds of approximately 19-32 mph, the rear part of the hood may automatically raise by about 3.1 inches upon collision with a pedestrian, reducing the likelihood of injuries. It has a staggering range of 260-330 miles, charge time is less than 1 hour on a Tesla supercharger, and it can do 0-60 in 6.6-3.5 seconds so plenty of power. Ford Puma Hybrid Let’s delve into the specifications of the Ford Puma, a compact SUV that combines style and efficiency, it combines an electric motor with a conventional engine for improved fuel efficiency and reduced emissions. Whether you’re looking for practicality, style, or performance, the Ford Puma has something to offer, accommodating five passengers comfortably. The Ford Puma offers varying levels of performance depending on the trim and engine. Powered by a 1.5-litre, three-cylinder engine (a slightly torquier version of the one found in the Fiesta ST).The standard Ford Puma models all have different power outputs and performance characteristics, while I don’t have specific top speed data for all variants, it’s safe to assume that they fall within a similar range. In April the plant world begins to get exciting in the gardens,verges,hedgerows and woodlands. It is regrettable that we have lost so many hedgerows and verges in our area with the road development on the A164 from Beverley to Cottingham. Seeing the destruction of so many shrubs, trees and grass verges is heart-breaking. Once they have gone you realise their beauty and value. The blackthorn with its masses of dainty white flowers has disappeared, as have the moon daisies, the pink campion, the cow parsley which are so lovely in the summer. At least once you arrive at the Skidby roundabout, sometime during the month you can expect to be greeted with a wonderful display of cowslips. No doubt the new verges will be replanted but it will take many years to replenish the biodiversity that has been destroyed. The regrowth of the verges would make a very good project to study as new species begin to move in. Perhaps some fairies will sprinkle some wild flower seeds around including some yellow rattle to deter the tough grasses. We have lost the habitat for everything, plants, insects, birds etc. A complete ecosystem gone. On a more cheerful note, it has been reported that the giant redwoods in the UK are thriving because climate change has brought about wet conditions which suits them. We do not have huge forests of them here, like California, but many specimens can be found in botanical and stately home gardens. They are suffering in California because of lack of rain, so their lack of growth will reduce their important contribution to carbon capture. One of my favourite Spring flowers which enjoys damp conditions is the Snake’s-head Fritillary (Fritillaria meleagris). In the wild it thrives in water meadows, but is rarely seen in the UK these days. They grow in a water meadow at Magdalen College, Oxford, where they are protected. For many years we used to spend every Easter holiday in France, and as soon as I arrived I would be on my bike in search of the fritillaries which grew in profusion nearby in the riverside meadows of the Charente. The children thought that I was mad as I was so excited at the possibility of being there when the fritillaries were in flower. If you plant some bulbs, or buy a pot with them in flower, they will need a permanently damp, lightly shaded spot. More exotic ones such as the Crown Imperial are easily available now, but nothing beats the Snake’s- head with its bell-shaped, checker- board patterned flower. It is a plant admired by Charles Rennie Mackintosh (1868-1928). His pencil and watercolour painting ‘Fritillaria’ which he did at Warberswick in 1915 is very familiar on cards, tea- towels, posters, china and jewellery, etc. The hellebores have put on a great show this spring and it is easy to collect the seed. The pods themselves are a beautiful feature of the plant. The pods go brown as they dry and split, and the seeds drop out. Collect them when you can hear the seeds rattling in the pod, taking care to handle with gloves as the sap can cause irritation to your skin. Once collected, it is best to plant immediately as it is not a seed that stores well. You may wait a while until you get a flower on your new plant, but it can be full of surprises, as it may well not look at all like the parent plant. IN THE GARDEN The list of plants which you can expect to burst into bloom and growth in April is endless. The clocks will have gone on so you will have more light in which to enjoy the garden and get to work. Ornamental cherries will be opening with their showers of pink or white blossom. The cherry blossom in Japan is called’ Sakura’ and represents a time of optimism and renewal. That really sums up spring for me. Small plants and alpines bring much colour to the Spring garden such as purple/ mauve Aubretia, yellow or white Dog’s-Tooth Violets (Erythronium) and the Pasque Flower (Anemone Pulsatilla). Magnolia buds are about to burst and I am keeping my fingers crossed that there will be no more frost as I have removed the covering I put on mine for the winter: I am sick at looking at it as its a bit of an eyesore, so I hope that it is redundant now. New fern fronds are beginning to unfurl their curious bishop’s crooks or fiddleheads, and while the daffodils continue in their many forms the tulips are getting going. Some of the smaller species varieties such as the yellow and red T.kaufmanniana and bright red T.praestans are coming out. They are real sun worshippers and do respond to a bright sunny day, as do we all. I have always wanted to see tulips growing in the wild, and was ecstatic to see them high up in the mountains in Crete a few Easters ago. As with the daffodils, you can extend the tulip season choosing varieties that come out in succession. My favourite tulip is the flamboyant Parrot variety. I have some attractive metal supports which shortly I shall position over the emerging shoots of perennials such as Paeonies and Delphiniums. You will have a hard job to position them once the plant gets going. I have Hostas in pots which are really pot-bound and need new homes. They can be tricky to divide, but I find to slice the plant with a spade or a knife and re-pot. Once the leaves start to grow the slugs will make their appearance and happily chomp away at the new shoots. I shall try spraying with garlic solution this year. The recipe is two garlic bulbs boiled in two litres of water and then sieved. Use two table spoons of the liquid to five litres of water for the spray. Slugs are busy all year long, unlike snails which are dormant in the winter. The Keel slugs (Milax) live in the ground and its small yellow-white eggs will indicate its presence awaiting your next crop of potatoes! The Grey Field slug and the large black slug live above ground and can be seen on the damp pavers in our garden slithering their way from tasty plant to tasty plant. The large black slug can extend to twelve centimetres! ON THE PLOT As soon as the soil has warmed up, and a good indication of that is the weeds getting, work can start in earnest. Easter Monday is traditionally the day to plant potatoes, but of course Easter can fall any time between 22nd March and 25th April. Weather can change considerably within the space of one month, so I think it best to follow the weather and not the calendar. There are so many varieties of potato to choose from, so I try to limit myself to some salad potatoes and some main crop which will store well. I once tried Pink Fir Apple for salads as they are delicious, but so irregularly shaped that I invariably knocked off bits while harvesting which next year appeared as new growth where I did not want them. You can carry on planting out shallots and onion sets and sowing things such as carrots, lettuce, radish, spring onions, spinach and chard. I try to grow beetroot ‘Rouge Crapadine’ which is highly recommended by chefs for its flavour. It does not look like a regular beetroot as it is cylindrical with a very rough warty skin, sometimes called the Toad beetroot. I start them off at home and transplant later. Peas will need supporting and it is best to put some in when you sow the seed. I find that there are lots of fallen branches from some birch trees on my way to my plot which I gather up. They make excellent delicate pea support and later on I add something sturdier. If your broad beans have got going watch out for black fly and pinch out the tops of the plants to prevent the flies finding a tasty home. OUT & ABOUT and DATES Violets and primroses are out, and blue bells and wild garlic will not be far behind, making woodlands such as Burton Bushes on the Westwood, Wauldby Skrogs at Raywell and Millington Woods near Pocklington interesting for a walk in the Spring. SPRING IS HERE Thank goodness, Spring is finally here – and now that the clocks have sprung forward, we’ve got longer and lighter evenings to look forward to. Doesn’t it make the world of difference when the sun shines and it stays dry for the whole day? I’ll be able to get my washing out on the line (I know I’m not the only one thinking this!) and we’ll be able to really start tidying up the garden after the winter. We’ve already made a start, but there’s always so much more to do! I’m also looking forward to our first ‘pizza oven’ night of the year in the outdoor kitchen my husband built us. I’m going to have to refresh my memory on my pizza dough recipe. If you’ve got a tried and tested one, you must let me know. INCREASE IN VISITORS TO CANCER SUPPORT WEBSITES AFTER KATE’S DIAGNOSIS I think we were all shocked to hear the Princess of Wales speak out about her cancer diagnosis and subsequent preventative treatment, particularly so soon after the King’s diagnosis. But since sharing her story, cancer charities have reported an increase in visitors seeking information on their websites. In the first 48 hours since Kate broadcast her message, Macmillan Cancer Support said they had nearly 100,000 visitors, which was 10% higher than the same time last year. Cancer Research UK saw a similar surge in traffic to its website while NHS England also reported a spike in visits to its online cancer page. Raising awareness of the symptoms is absolutely vital in the fight against this horrible disease and the earlier the diagnosis, the better. So please visit your GP if you’re not sure about something that’s different and if you are called for any routine screenings, make sure you keep your appointment. It could save your life.
